Preheat the oven to 426 degrees F and prepare a baking sheet with nonstick spray or a light coat of oil.
In a wide bowl, combine crushed Kibo Lentil Chips, parmesan cheese, Italian seasoning, and salt & pepper.
In another wide bowl add 2 eggs and whisk together until fully combined. Assemble the zucchini fries by dipping each piece of zucchini into the egg mixture and then into the crumb mixture.
Gently tap to remove any excess coating and place it on the baking tray. Repeat with the remaining zucchini pieces, arranging on the baking sheet leaving about 1-2 inches of space between each fry.
Place the baking sheet in the oven and bake at 425 degrees F for 13-15 minutes until the zucchini fries are crisp on the outside and lightly golden.
Remove from the oven and eat while hot. Serve with marinara sauce or a lemon garlic aioli if desired. Enjoy!

3/4th cup grated parmesan
1.5 tsp Italian seasoning
1 tsp salt
1 tsp black pepper
