Wash, Cook and mash sweet potatoes
Wash, drain and mash chickpeas and add to sweet potatoes
Add in the rest of ingredients and mix well to fully combine
Preheat overn to 350 and line baking pan with parchment paper
scoop even falafel patties and place on baking sheet. Drizzle 1tbsp oil on falafels and bake for 30 minutes!!
Serve along side in a bowl with your favorite veggies/ toppings and of course more lentil chips!! I plated mine with fresh arugula, avocado, rainbow carrots, pumpkin spice pumpkin seeds, roasted potatoes, sesame seeds, maple roasted acorn squash, and spicy cashew butter dressing!!
