Preheat oven to 375 F.⠀
Clean and dry kale.
Cut sweet potato into ½ inch cubes and toss with 1 Tbsp olive oil. Lay on baking sheet and roast for 10-15 minutes, until lightly charred. Remove from oven once cooked to let cool.⠀
In a small bowl, massage kale with lemon and 1 Tbsp olive oil. Let rest
In a sauce bowl, mix together tahini and maple syrup.
To assemble: first put quinoa in a bowl. Then top with kale, honey roasted pecans, sliced apple, buckwheat seeds, and Kibo chips. Drizzle with tahini maple dressing and serve.
